Fit For The Holidays: Apple Spice Cake Wtih Raw Caramel Icing- gluten free, no added sugar, high fiber!

Make an exceptional holiday festive cake your whole family will enjoy but is secretly part of your diet plan mwahahahah!!

This cake uses almond flour instead of any flour, lots of homemade apple sauce(if you made some like I did) and festive spice flavors like cinnamon, ginger, nutmeg and “caramel”.  I used raw soaked dates for the “caramel icing” , is your mouth watering yet?

Cake Ingredients:

1. 2 Mason Jars homemade apple sauce

2. 2 cups almond meal or almond flour

3. 1tsp baking soda

4. 1tsp salt

5. 5 packets stevia

6. 6 eggs

7. cinnamon, ginger, nutmeg, vanilla to taste

Throw all these in a food processor and blend on high for about 2-4 minutes.  Pour into cake pan or glass pie plate and bake at 350 for about 45 mins-1 hour or until toothpick or knife comes out clean.

Raw Caramel Icing:   Make while cake is baking

1. 1c soaked dates with 2-3tblsp of the water

2. 1tblsp vanilla or 1/2 stalk vanilla bean

3. 1 tblsp coconut butter

Blend on high stopping to scrape sides as necessary until its nice and smooth:)
